I still consider Doom the best game i ever played
There is plenty of doom mods, wich enhance visual quality.
Personally this was the best i found (also, never searched to much for this, no patience.) for doom (works with all dooms, also heretic and hexen)
Doomsdays engine:
http://sourceforge.net/projects/deng/
you can choose whether you want 3d models or not. i prefered to play the old shool style, but with just better textures/no pixels rendered.
Concerning quake games, quake 2 was maybe the 2nd best game i ever played, and here you can get a very good patch, just for the steam version of quake2, and its expansion packs:
http://forums.steampowered.com/forums/showthread.php?t=1756937
I tried this one when i bought the complete quake pack back in x-mas, mainly just to get a way to set a widescreen resolution. So, the games looks so nice, simply with better high res textures, HDR, and some other stuff. had a blast playing it again at 1920x1200 with improved gfx.
In that same thread there is a link also for a similiar patch to quake 1, never tried it though.
Im waiting for a 75% discount on the doom complete pack separate, as i got quake complete pack at x-mas for 75% discount.
in this past summer sale, they did only 66% discount on the doom pack, i was still tempted, but did other choices. it can wait to next x-mas. ^^
Cheers!

tbh im going to recommend the 'free to download' versions.
I owned illegal versions of doom before i bought this prepack. They are better than whats supplied on Steam.
They are probably ok for Windows XP, but Windows 7 is a no no. The reason I support the illegal download is you will proabably find better software support for the illegal versions. With steam you get some DOSBox port where you cant even change the control options. Utter bollox. Quake 1 and 2 are shaping up to be as bad.
Then the last version of Doom is giving me all sorts od CD Key issues.
